Fumee de Sel was created by a collaboration between French salt harvesters in Guérande and an American smokehouse in Washington State. Hand-harvested Fleur de Sel is shipped to the Pacific Northwest where it is slow-smoked over French oak staves from Chardonnay wine barrels. The result is a salt that bridges French terroir with American craft smoking tradition.

French Salt Meets American Smoke

Fumee de Sel represents one of the most premium artisan salts available. It starts with genuine Fleur de Sel hand-harvested from the surface of evaporation ponds in Guérande, Brittany. This already-premium salt is then shipped to a smokehouse in the Pacific Northwest where it is cold-smoked over staves from French oak Chardonnay barrels. The smoking process takes about two weeks, slowly infusing the delicate crystals with layers of smoke, oak, and wine-barrel character.

Using Fumee de Sel

This salt deserves to be showcased on dishes where its complexity can be appreciated. Finish a piece of pan-seared salmon or trout with a small pinch. Sprinkle over a cream-based risotto just before serving. Add to roasted chicken breast. It pairs beautifully with mild, creamy cheeses like burrata, brie, and fresh mozzarella. A few crystals on a piece of dark chocolate create a sophisticated dessert moment. Because of its price and limited production, use it sparingly and intentionally.
